Mediterranean Salad

  1. Ingredients:
  • 2 medium-sized ripe tomatoes, chopped
  • 1 red bell pepper, chopped
  • 2 cups shredded cabbage
  • 1 medium-sized cucumber, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced kalamata olives
  • 1/4 cup chopped fresh parsley
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the chopped tomatoes, red bell pepper, shredded cabbage, and chopped cucumber.
  2. Add the crumbled feta cheese, sliced kalamata olives, and chopped fresh parsley to the bowl.
  3. In a separate small bowl, whisk together the olive oil and lemon juice to make the dressing.
  4. Pour the dressing over the salad and toss to combine.
  5. Season with salt and pepper to taste.
  6. Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld together.
  7. Serve chilled and enjoy your delicious Mediterranean salad!
  8. Thai Salad: Ingredients:
  • 2 medium-sized ripe tomatoes, chopped
  • 1 red bell pepper, chopped
  • 2 cups shredded cabbage
  • 1 medium-sized cucumber, chopped
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped roasted peanuts
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp brown sugar
  • 1 garlic clove, minced
  • 1 red chili pepper, minced (optional)


Instructions:

  1. In a large bowl, combine the chopped tomatoes, red bell pepper, shredded cabbage, and chopped cucumber.
  2. Add the chopped fresh cilantro, chopped fresh mint, and chopped roasted peanuts to the bowl.
  3. In a separate small bowl, whisk together the fish sauce, lime juice, brown sugar, minced garlic, and minced red chili pepper (if using) to make the dressing.
  4. Pour the dressing over the salad and toss to combine.
  5. Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld together.
  6. Serve chilled and enjoy your delicious Thai salad!
